Farren & Mariska Tie the Knot at Bergland

The wedding of Farren and Mariska (affectionately known as ‘Fariska’ by their inner circle) was a day close to our hearts. As friends going as far back as high school, we were ecstatic when we were asked to cater as it meant we could be more than just guests by helping deliver their dream wedding and creating a menu that they would always remember.

The food service was a formal dining affair with canapes for pre drinks, followed by a delicious plated mains and a dessert. As a firm favourite of the brides, lamb simply had to be on the menu, however we had to caution against a heavy dish (this, we knew, would be a dancing wedding, and we could not have heavy stomachs weighing down on tapping feet). Furthermore, being a December wedding we had to ensure that the dish was light and colourful. To achieve this we took inspiration from North Africa for the mains, curated a colourful variety of canapes for the pre drinks (to accompany a gin bar of the highest order), and ended off with a classic dessert.

Canapés

Parma ham and melon balls
Brie and caramelised onion tarts
Charred steak bruschetta
Artichoke, mint and pecorino bruschetta
Herbed pork and mango salsa spoons
Thai Fish Cakes with a coriander mayo

Mains

Pulled Moroccan lamb, served over roasted vegetable couscous, caramelised chickpeas, ricotta, harissa, roasted garlic aioli and micro herbs
Mushroom and lentil stuffed paprika pepper, served over roasted vegetable couscous, caramelised (vegetarian)

Dessert

Double chocolate brownies served with vanilla bean ice cream and Lindt chocolate shards

The Result

The food was delicious! The canapes really kicked off the food service with their variety in flavour, colour and texture. The Moroccan style mains did everything we hoped it would. The flavour of the lamb was elevated with warm and smoky North African flavours. The caramelised chickpeas provided a subtle sweetness, and the roasted garlic aioli was an oasis of cool freshness on the plate, balancing the other elements.

What we loved about this menu is that we were given the space to be creative. Thank you Farren and Mariska for having us cater on your wedding day.
